Ingredients
1 1/4 oz. Gin
1/4 oz. Absinthe
1/4 oz. Luxardo Maraschino Liqueur
3/4 oz. Lemon juice
1/4 oz. Mint simple syrup
1/4 oz. Demerara syrup
Fresh egg white
Club soda
Lemon peel
Instructions
Combine all ingredients through egg white in a shaker. Dry shake vigorously for approximately 45 seconds, then add ice and shake again until chilled (roughly 15 seconds). Double strain into a Collins glass filled with ice. Top with club soda. To create a nice foamy cap on the drink, let it rest for about a minute, then top again with another heavy splash of club soda to allow the froth to rise up out of the glass slightly. Express a lemon peel by twisting it with your thumb and forefingers of both hands over the top of the glass. Run the peel around the rim of the glass and set it on the rim.
